Wrap It Up With Veggies!

  • 8 leaf inner lettuce
  • 1 cucumber (8-1/4″) cucumber
  • 2 medium carrot
  • 1 medium (approx 2-3/4″ long, 2-1/2 dia.) bell pepper, red
  • 1 fruit, without skin and seed AVOCADO
  • 8 tablespoon hummus


  • Dice the carrots, cucumber and pepper. Slice avocado into 8 pieces.
  • Place 1T hummus onto each lettuce leaf, layer with veggies and avocado, wrap it and enjoy!  If sending to school, send to be assembled at lunchtime.
