Waldorf Wraps

  • 1/2 cup pine nuts, dried
  • 1/4 cup water
  • 1 clove garlic
  • 3 tablespoon lemon juice
  • 1 teaspoon vinegar, cider
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt


  • 3 stalk celery
  • 2 medium apple
  • 2 stalk green onion
  • 1 cup walnuts, chopped
  • 1 cup grapes
  • 2 cup lettuce, shredded
  • 4 medium tortilla, whole wheat


  • For the dressing: place pine nuts, water, garlic, lemon juice, vinegar, olive oil, honey and sea salt into a blender. Blend until smooth; set aside.
  • Chop celery, apples, and onions; toss into a large bowl along with walnuts. Halve the grapes and add to bowl along with shredded lettuce. Toss together with dressing. Add an even amount to each tortilla and wrap tightly.
  • Serve with any extra apples, grapes, and celery on the side.
