Veggie Stuffed Apples

  • 4 medium apple
  • 4 medium carrot
  • 1 medium bell pepper, yellow
  • 1/4 cup hummus


  • Remove the stem of the apples by slicing 1/2 inch off the tops horizontally. Using an apple corer, remove the core. Alternatively you may use a thin, sharp knife to cut the core out, being particularly cautious about placement of your fingers in relation to the knife.
  • Slice carrots and bell pepper into sticks.
  • Use each apple as a veggie holder: spoon a tablespoon of hummus into each apple and add veggie sticks. Don’t forget to eat the apple “bowls” too!
