- 4 medium apple
- 4 medium carrot
- 1 medium bell pepper, yellow
- 1/4 cup hummus
Remove the stem of the apples by slicing 1/2 inch off the tops horizontally. Using an apple corer, remove the core. Alternatively you may use a thin, sharp knife to cut the core out, being particularly cautious about placement of your fingers in relation to the knife.
Slice carrots and bell pepper into sticks.
Use each apple as a veggie holder: spoon a tablespoon of hummus into each apple and add veggie sticks. Don’t forget to eat the apple “bowls” too!
