Veggie Stuffed Apples

- 4 medium apple
- 4 medium carrot
- 1 medium bell pepper, yellow
- 1/4 cup hummus
- Remove the stem of the apples by slicing 1/2 inch off the tops horizontally. Using an apple corer, remove the core. Alternatively you may use a thin, sharp knife to cut the core out, being particularly cautious about placement of your fingers in relation to the knife.
- Slice carrots and bell pepper into sticks.
- Use each apple as a veggie holder: spoon a tablespoon of hummus into each apple and add veggie sticks. Don’t forget to eat the apple “bowls” too!
