  • 3 cup rotisserie chicken
  • 4 cup lettuce, romaine
  • 2 cup spinach
  • 1 medium cucumber
  • 2 stalk green onion
  • 1 medium bell pepper, yellow
  • 2 medium tomato, red
  • 1 medium avocado
  • 1/4 cup cilantro
  • 1 cup corn, canned
  • 15 ounce black beans, canned
  • 1/4 cup ranch dressing, low fat
  • 4 ounce tortilla chips
  • 1 medium lime

Serve With

  • 2 medium apple


  • Chop the chicken, lettuce, and spinach; toss into a large bowl.
  • Dice cucumber, green onions, bell pepper, tomatoes (seeds may be removed if desired), avocado, and cilantro; drain and rinse corn and beans. Add to the chicken and greens. Drizzle with dressing and toss to combine. Spritz with fresh lime juice if desired.
  • Serve tortilla chips and apple slices on the side.
