- 4 leaf inner lettuce
- 1 cup hummus
- 4 slice turkey breast, deli style
- 1 medium cucumber
- 1/4 teaspoon paprika
- 4 cup watermelon
- 4 serving crackers, whole-wheat
- Dice cucumber; peel first if desired.
- Open each lettuce leaf and layer with hummus, turkey, and cucumbers. Sprinkle with paprika and roll up.
- Serve with watermelon chunks and crackers on the side.
