Ingredients

  • 2 tablespoon mayonnaise, light
  • 5 ounce tuna, canned in water
  • 4 regular English muffin, wheat
  • 1 cup alfalfa sprouts
  • 1 medium avocado

Serve With

  • 2 cup strawberries

Instructions

  • Mix mayonnaise with drained tuna fish.  Spoon tuna salad on an English muffin. Top with alfalfa sprouts and thin slivers of avocado. Serve with a side of strawberries.

Is there a way to keep the avocado green when packed away in a lunch? I think my daughter would love to bring this to school, but her lunch period isn’t until 1 pm.

Hi Kris! It’s tough keeping the avocado green. You can try adding a squeeze of lemon and pressing the sandwich together tightly to minimize oxidation. But ultimately you’ll probably have to settle for some color loss.
