TRIPLE ALMOND POPPYSEED MUFFINS

  • 3 egg yolks
  • 1/3 cup honey
  • 1 tsp almond extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Mix all ingredients together to well blended, then slowly fold in

  • 1 1/4 cup almond flour (made grinding raw blanched almonds in a blender)
  • 3 egg whites, beaten till frothy, then folded into batter
  • 1-2 TBL Poppyseeds

Pour batter into 6 regular sized muffin cups.  Sprinkle slivered almonds and brown sugar on top.  Bake at 350 for about 20 minutes, or until knife comes out clean.  This recipe is gluten free, but seriously, you wouldn’t even know it!

The almond flour- I blended only a small handful at a time… very small.

With Brian being allergic to nuts (not peanuts) we stay away from many of your latest suggestions. 🙁 I’m nervous to even let Kyler try any form of nut, besides peanuts. Bummer.
