  • 1 cup quinoa, uncooked
  • 2 cup grape tomatoes
  • 2 medium apple
  • 1 medium avocado
  • 1/4 cup Italian dressing, low fat

Serve With

  • 4 medium kiwi
  • 4 medium plum


  • Cook quinoa according to package directions, then set aside to cool.
  • Meanwhile, dice tomatoes, apples, and avocado. Add all to cooled quinoa, then toss together with dressing.
  • Serve with plums and kiwi on the side.
