- 1 cup quinoa, uncooked
- 2 cup grape tomatoes
- 2 medium apple
- 1 medium avocado
- 1/4 cup Italian dressing, low fat
- 4 medium kiwi
- 4 medium plum
- Cook quinoa according to package directions, then set aside to cool.
- Meanwhile, dice tomatoes, apples, and avocado. Add all to cooled quinoa, then toss together with dressing.
- Serve with plums and kiwi on the side.
