I’ll be honest, I’m not a huge fondue fan.  My husband is crazy for it so I decided to try out this recipe because I love spinach artichoke dip… oh wow! I have converted! This Cheesy Spinach Artichoke Dip is beyond amazing.  Every bite was incredible! I loved using these healthy dippers too.  You can definitely also use bread slices and crackers, but we also loved dipping with broccoli, sweet peppers, celery and apples.  You can also use cauliflower and carrots or other veggies.  The apples and broccoli were my favorite with this fondue.  The sweetness of the apples with the tang of the cheese was perfection.

How to Make Spinach Artichoke Dip

The key to making a beautifully smooth cheesy dip, is to combine a soft cheese and hard cheese to get the best consistency.  So depending on what you already have in your fridge or what your kids like, you can swap out cheeses!  As far as the spinach goes there are a few ways to do it.  The first time I made this I left the spinach roughly chopped and it was great, but if you finely chop up the spinach it makes the consistency much better.  

The great thing about having veggie dippers, is that if you have leftovers, you can just bag them up and use them as packaged healthy snacks to eat on the go!

How to Serve Spinach Artichoke Dip

Do you have to have a fondue pot? Nope?? You can make this on the stovetop and then transfer it to a warm bowl.  The difference is that it will start to cool down so dipping won’t be quite as smooth, but it will still taste just as great!  If you ever do want to get a fondue pot this is my very favorite one.  Your kids can dip their own things and create the own little dinner! Melt chocolate and dip apples, strawberries and other fruits for dessert! Make sure to try out Easy Fruit Fondue

Chop up your dippers into bite sized pieces to make it easier for you kids to eat! Then theres no need for knifes at the dinner table… easier cleanup!

  • In a small sauce pan add chicken broth, finely chopped spinach, and artichoke hearts.  Place over medium heat and bring to a simmer.  Once simmering, add minced garlic and then let cook for 1 more minute.
  • In a separate bowl, add all the cheeses (make sure they’re grated or chopped) and coat in flour.
  • Add cheeses tossed in flour to sauce pan and stir until melted.
  • Transfer to a preheated fondue pot on low.  Eat with apples, carrots, broccoli, cauliflower, celery or sweet peppers!

Hi,

I love your recipes and cannot wait to make all 10 slow cooker meals but your recipes don’t say how many people they feed? Can you please let me know how many for the slow cooker meals and for your other recipes in general so I know if I need to double it, (Large family)

Looks delicious and fun! Unfortunately, We have an artichoke allergy.Could you omit the artichokes? What could you add in place?

Hi Leslie, you can omit the artichoke but it will change the flavor and consistency of the fondue a bit. I saw a suggestion for trying small chopped kohlrabi as a substitution for artichoke hearts and I like that idea!

This used to be my go-to recipe, but I see it has been changed on the webiste! This link used to lead to a slow cooker version … would love the original recipe to be posted again, please! My pinterest pin still has the original (slow cooker) picture.
