Yum! I love a good steak dinner and this meal sure hit the spot for our families dinner tonight. Steak and rice along with a trio of roasted mushrooms, red peppers and broccoli. Isn’t your mouth watering right now?

Watch as each element is transformed into a delicious part of the meal!  A marinated flank steak served with brown rice, along with mushrooms, bell peppers and broccoli roasted in the oven. Your plate will be so bright and colorful!  A perfect dish for the Spring and Summer evenings coming up.  This recipe is delicious and exceptionally easy to make. When cooked right flank steak is the most tender steak to cook on the stove top. You could always buy you favorite cut of beef roast and use your crock pot as well if you desire. That too will be just as good. This dinner is truly restaurant quality and you can always make enough to serve when company is over.

Start by thinly slicing the garlic and toss in a large bowl with soy sauce, half the lime zest, the lime, grated fresh ginger, and 1/2 teaspoon pepper. Cut beef into thin strips and then mix with soy sauce mixture; cover and refrigerate to marinate at least 30 minutes, or overnight. One note about slicing your steak, the grain of the meat refers to the direction of the muscle fibers. In flank steak, they run lengthwise. Cut across the grain or across the width of the steak to break up the fibers for slices that are tender, not tough

I want to talk about the fresh ginger for a minute. I always find that I waste so much of my fresh ginger let alone it’s very time consuming to peal and press fresh ginger. I was shopping in the freezer sections a while back and I happen to come across the most genius thing! Frozen ginger cubes. I think I shrieked like a little kid.  I now keep these stocked in my freezer. They are simple to use. Just pop one or two out and use in your meals.

Next you will cook the rice as directed on package. Cover and set aside.

In a small bowl mix juice from one lime (the recipe calls for 1/4 cup, so a second lime may be needed), honey, and 1/2 teaspoon pepper; set aside.

Preheat oven to 450 degrees.  Slice mushrooms, pepper, and broccoli into small bite sized pieces and arrange on cookie sheet. Drizzle with remaining 2 tablespoons of olive oil and sprinkle with salt. Roast in hot oven for 8-9 minutes.

Heat a large skillet over medium-high heat; pour in 1 tablespoon of oil. Cook beef for 3 minutes constantly stirring to evenly cook the meat.  Cook until no longer pink (or to desired doneness).  Pour honey sauce over top and cook for 1 more minute. Eat and enjoy your yummy meal tonight. If you are lucky enough to have leftovers, the steak slices are perfect to toss in your salad for lunch the next day.

Ingredients

  • 1 cup brown rice, raw
  • 1 clove garlic

  • 1 tablespoon honey

  • 1 cup diced mushrooms, portabella
  • 1 medium bell pepper, red
  • 4 cup broccoli, florets

Instructions
