- 2 cup wheat berries
- 3 medium orange
- 1/4 cup coconut oil
- 2 tablespoon honey
- 4 leaves mint, fresh
- 1/4 teaspoon sea salt
- 4 ounces walnuts
- 2 medium pear
- 2 medium carrot
- Make wheat berries as directed on package. Allow to cool to room temperature.
- While they cook, zest 1/2 of one orange and mix in a small bowl with juice of one orange, oil, honey, 2-3 (chopped) mint leaves and salt.
- Peel and section the remaining 2 oranges, cut wedges in half and add to the bowl with wheat berries along with the mint dressing. Chop walnuts and toss in with wheat berries, mix well.
- Serve each bowl of wheat berries with 1/2 pear and a few carrot sticks.
