A quick dinner bursting with healthy superfoods? Yes, please! These sweet potato noodle and egg tacos come together in under 30 minutes and use basic ingredients. This delicious recipe comes from our friend Kelly’s new cookbook Superfood Weeknight Meals – a fantastic resource for super healthy, super quick weeknight meals.
Guys, these tacos were so good. Like, “my husband wasn’t hungry but ate three” good. Like, “I usually edit my pictures before I write my posts but I have to talk about this NOW” good. I think you get my point.
Superfood Weeknight Meals Cookbook
But before I talk tacos, let me tell you about this cookbook. Our friend Kelly, creator of the blog Nosh & Nourish, just published Superfood Weeknight Meals. This beauty is my new favorite cookbook – seriously. It’s the perfect combination of everything I need: quick and healthy meals, fresh flavors, and all made up of the basic wholesome ingredients I love. Plus, the pictures are beautiful!
The superfoods focused on in these meals are:
- Sweet potatoes
- Citrus fruit
- Olive oil
So basically favorite, favorite, favorite. I love that I don’t have to totally change the ingredients I shop for in order to make these meals.
Now I can’t wait to try the spinach pesto pizza, broccoli-cheddar soup, and easy olive oil cake (yum!). But back to the tacos at hand…
Now about these sweet potato & egg tacos
So aside from being extremely tasty, these tacos are just fun. I love the use of spiralized sweet potatoes that add a fun texture. The citrus guac is also a wonderfully fresh compliment to the sweetness of the sweet potatoes and the savory eggs. It all just goes so well together.
To make the sweet potato noodles, you can either spiralize your sweet potato or julienne it into string-like noodles. Another upside to noodling your sweet potato is that your it only takes 15 minutes to cook instead of an hour!
TIP: If using a spiralizer, place your spiralizer on top of the baking sheet you plan to cook the sweet potatoes on. This reduces dishes and keeps your sweet potato noodles from getting all over the counter. I am all about reducing mess when possible! And if the sheet slips around like mine started doing, press it against the back of the counter to stabilize as you push the sweet potato through.
Toss your sweet potato noodles in olive oil, salt, and paprika and then bake for 15 minutes at 425* F. I’ll be honest, I was a little nervous about the paprika because I have had bad experiences with it being overpowering so I’ve become biased against it, but it works perfectly on these noodles!
Now, there are two optional ingredients in this recipe: bacon and shredded cheese. I chose to use bacon because, well, bacon makes everything better. The tacos are fantastic all on their own, but of course taste amazing with bacon too!
If you choose to use bacon, cook it at this point and set aside. I baked mine at 400* F for about 15 minutes.
You need this citrus guac
Now let’s talk about this guac. I’ve never had a guacamole so unique, and I think it’s my favorite now. The orange compliments the avocado perfectly, Greek yogurt makes it nice and smooth (+protein!), and adding a bit of onion and salsa gives it just the flavor it needs.
And that’s really all it is – mash your five ingredients together with a fork and keep it in the fridge until you’re ready. Feel free to mash until well blended, or to leave some chunky bits of avocado if you like.
Assemble your tacos
When you’re just about ready to eat, scramble and fry up your eggs in 1 teaspoon of olive oil. Layer eggs, sweet potato noodles, and guacamole on your tortillas. Crumble and sprinkle on bacon bits and cheese if using.
And that’s it. Dinner is served!

Sweet Potato Noodle & Egg Tacos with Citrus Guac
- 6 large egg
- 1 teaspoon olive oil
- 1 medium sweet potato
- 1 1/2 teaspoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 2 medium avocado
- 2 tablespoon Greek yogurt, plain
- 2 tablespoon salsa
- 1/2 medium onion, red
- 1/8 medium orange
- 8 each Tortilla, Flour
- 3 slice cooked bacon
- 1/2 cup colby-jack cheese, shredded
- Preheat oven to 425* F.
- Peel and spiralize sweet potato, or julienne it into string-like noodles.
- Mix the sweet potato noodles with olive oil, paprika, and salt until evenly coated. Spread the noodles evenly on a large baking sheet and bake for about 15 minutes, until noodles are cooked and slightly crispy but not burnt.
- Meanwhile, mix up your citrus guac by mashing avocados, Greek yogurt, salsa, 2 Tablespoons of chopped red onion, and 2 Tablespoons of diced orange together. Set aside.
- Add 1 teaspoon of olive oil to a small pan over medium heat, then add scrambled eggs and stir regularly until cooked.
- Layer tortillas with eggs, sweet potato noodles, and citrus guac. Sprinkle on cooked and crumbled bacon and/or cheese if using.
