Ingredients
- 2 tablespoon chili powder
- 2 teaspoon cumin, ground
- 1 teaspoon coriander
- 1/2 teaspoon cloves, ground
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1 teaspoon oregano, dried
- 3 pound pork loin
- 1 each bay leaf
- 1 1/2 cup water
- 8 medium tortillas, corn
Toppings
- 1 cup pinto beans
- 1 cup lettuce, romaine
- 1 medium avocado
- 1 medium tomato, red
Dressing
- 1/4 cup Greek yogurt, plain
- 1/4 cup lime juice
- 1/4 cup cilantro
Instructions
- Mix chili powder, cumin, coriander, cloves, onion powder, garlic powder, salt, and oregano in a bowl. Fully coat pork with spice mixture and place in crock pot. Add bay leaf and water. Cook on low for 6-8 hours.
- Shred pork, rinse and drain beans, shred lettuce, cube avocado, and chop tomato; set all aside separately.
- Mix together the yogurt, lime juice, and chopped cilantro; set aside.
- Add tortillas to serving area and allow everyone to assemble their own tacos.
