Crispy Chicken with Thyme

I’ve been enjoying cooking with the fresh herbs this week, and I can’t wait until our own herbs start to sprout. The seeds say only 10-14 days and they’ll begin to sprout.  It will be so much cheaper to cut herbs out of our own pots, than to buy them fresh.  Fresh thyme cost me $3.00, and it’s not going to last much more than a week!

Un-Fried Chicken With Thyme

  • 1/8 cup milk
  • 2 beaten eggs
  • 1 cup crushed saltine crackers
  • 1/2 tsp. paprika
  • dash of pepper
  • dash of salt
  • 1/2 TBL Fresh Thyme or 1 tsp. crushed, dried thyme
  • 2 LBS of chicken (breasts are the healthy option.. we used thighs because my husband thinks breasts are too dry and there are certain things I indulge him with.. chicken thighs are one of them.  But let me tell you, in this, thighs taste amazing!)
  • 2 TBL butter

Combine milk and eggs in a bowl.  In a separate bowl combine crushed crackers and seasonings.  Dip chicken into egg mixture and then dry crumb mixture.  Place in a greased baking dish and drizzle with melted butter (optional).  Bake at 375 for one hour or until chicken is cooked through. No need to turn the chicken during cooking.

I’ve only been following this blog for about a week now but love everything I’ve seen. Great photography and insight:)

I love making this chowder. It’s healthy and my kids (1 and 3) eat it! It’s a little sweet from the sweet potatoes and corn. I like to add chicken (rotisserie or any leftover) or sausage to give it a little more heft but it is great without it too. Thyme is definitely a star in it.

Hello! If I used chicken breast strips/ tenders instead of chicken thighs, how would that change the cooking time? Thanks!!
