Scrambled Avocado Eggs

  • 1 none cooking spray
  • 4 large egg
  • 4 tablespoon milk
  • 1 medium avocado
  • 4 cup cereal, high fiber, low sugar
  • 2 cup milk


  • Spray a skillet with cooking spray and heat over medium heat.  Whisk eggs and milk; pour into hot skillet.  Cook for 2-3 minutes to allow eggs to become firm.  Stir to scramble; cook until no longer runny.
  • While eggs cook, peel and remove pit from the avocado and cut into cubes.
  • Add scrambled eggs to each plate; top with avocado.  Serve each with a side of whole grain cereal and milk.
