  • 4 cup spinach
  • 4 slice turkey breast, deli style
  • 4 ounce mozzarella cheese
  • 1 cup cherry tomatoes
  • 1 cup cranberries, dried
  • 2 cup edamame, shelled
  • 1 cup slices cucumber
  • 4 cup strips or slices carrot
  • 4 slice bread, whole wheat
  • 4 tablespoon ranch dressing, low fat


  • Assemble this salad in a fun container starting with the spinach as the bed, and then top with each ingredients.  Try using a small shape food cutter for the cucumber slices or the bread; roll the meat and cut it into bite-sized pieces. Serve the edamame in the pods; kids love to pop them out on their own! Make it an eye-appealing veggie focused dish the kids will want to eat.
