Roast Salad Sandwich

Put those roast beef leftovers to good use with these tasty sandwiches embellished with fresh veggies.

Ingredients

  • 1/4 pound beef roast
  • 1/4 cup mayonnaise, light
  • 1 cup grapes
  • 1 medium carrot
  • 4 rolls, hard
  • 4 leaf lettuce, romaine

Serve With

  • 1 medium bell pepper, red
  • 1 medium bell pepper, orange

Instructions

  • Chop leftover beef from the previous night’s dinner, and add to a mixing bowl with mayonnaise. Slice grapes in half and grate carrot; add to meat (or leave grapes whole and eat as a side).
  • Cut rolls open and spoon in beef salad mixture; add lettuce and serve with pepper slices on the side.
