- 1 cup quinoa, uncooked
- 4 medium spinach tortilla wrap
- 1 cup black beans, canned
- 1 medium avocado
- 1/4 cup spinach
- 1/4 cup Monterey Jack cheese, shredded
- 1/4 cup feta cheese crumbles
- Cook quinoa as directed on package. Drain and rinse beans; slice avocado.
- Lay out tortillas and top each with beans, quinoa, a few slices of avocado, spinach, and cheeses. Roll up and slice in half.
- Serve with any fruit you may have on hand.
