  • 1 cup quinoa, uncooked
  • 2 clove garlic
  • 1 cup chopped parsley, fresh
  • 1/4 cup mint, fresh
  • 1 medium cucumber
  • 1 medium tomato, red
  • 2 stalk green onion
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 1/4 cup olive oil
  • 3 tablespoon lemon juice
  • 1/4 cup raisins, seedless
  • 1/4 cup pine nuts, dried

Serve With

  • 4 medium orange


  • Cook the quinoa according to package instructions. Cool slightly.
  • Mince garlic, chop parsley and mint.  Peel and chop cucumber, dice tomato, and slice green onions.
  • Add all of these to a large bowl along with the quinoa. Stir in remaining ingredients.
  • Serve with orange wedges.
