Quick Quinoa Granola

  • 8 tablespoon olive oil
  • 1/2 cup maple syrup, pure
  • 3 cup quinoa, uncooked
  • 1/4 teaspoon sea salt
  • 1 1/4 cup walnuts, chopped
  • 8 medium dates, Medjool
  • 3/4 cup raisins, seedless


  • 1 cup Greek yogurt, vanilla
  • 1 cup milk


  • Preheat oven to 400°F.
  • Add olive oil, maple syrup, and quinoa to a large bowl and thoroughly mix. Spread out onto a baking sheet and bake in preheated oven for 15-20 minutes. Stir mixture at least once while baking and be sure to check around 15 minutes to prevent from burning.
  • Allow mixture to cool completely, then stir in walnuts, chopped dates, and raisins.
  • Serve plain, with milk, or topped with yogurt.
