- 1 medium carrot
- 1 medium cucumber
- 1 cup quinoa, uncooked
- 1 cup walnuts, chopped
- 2 cup, quartered or chopped apple
- 1 cup, chopped kale
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper, ground
- Cook quinoa according to directions on package.
- Peel and chop carrots and cucumbers. Mix all ingredients (lemon is only the juice of approximately 2 wedges) together and serve at room temperature. Add sea salt and fresh pepper to taste.
