Quinoa Fruit Salad

Ingredients

  • 1 medium carrot
  • 1 medium cucumber
  • 1 cup quinoa, uncooked
  • 1 cup walnuts, chopped
  • 2 cup, quartered or chopped apple
  • 1 cup, chopped kale
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper, ground

Instructions

  • Cook quinoa according to directions on package.
  • Peel and chop carrots and cucumbers.  Mix all ingredients (lemon is only the juice of approximately 2 wedges) together and serve at room temperature. Add sea salt and fresh pepper to taste.
