Pizza Roll-ups and Cucumber Rounds

Ingredients

  • 4 medium tortilla, whole wheat
  • 1/2 cup spaghetti or marinara sauce
  • 2 cup spinach
  • 1/2 cup mozzarella cheese, shredded

Serve With

  • 1 medium cucumber
  • 2 medium orange

Instructions

  • Heat a large skillet over medium heat.
  • Spread sauce over each tortilla, then top with an even layer of spinach and mozzarella.
  • Roll up tortilla and place in hot skillet, seam-side down. Cook for 1-2 minutes, then flip and cook an additional minute.
  • Cool slightly then cut into pieces. Repeat with remaining tortillas.
  • Serve sliced cucumber and orange wedges on the side.
