  • 1 cup pineapple
  • 1 1/2 cup cottage cheese
  • 4 serving crackers, whole-wheat
  • 1/4 teaspoon cinnamon
  • 1 medium cucumber
  • 2 medium carrot
  • 4 slice ham, deli sliced


  • Thinly slice pineapple and then cut into pieces that are similar in size to the crackers.
  • Spread cottage cheese onto each cracker. Top with pineapple and sprinkle with cinnamon.
  • Cut cucumber and carrots into sticks; roll up inside the ham.
  • Serve immediately.
