- 3 cup tortellini pasta
- 1/4 cup pesto
- 2 medium carrot
- 1 cup spinach
- 1 cup cherry tomatoes
- 2 fruit MANGO, FRESH
- Prepare tortellini as directed on package. Drain, and immediately stir in pesto; toss to coat evenly.
- Dice carrots or cut into matchstick size. Add carrots and spinach to tortellini; spinach will start to wilt.
- Top tortellini with halved cherry tomatoes. Serve mango cubes on the side.
