Peanut Butter Breakfast Cookie

Ingredients

  • 1 large egg
  • 1/2 cup peanut butter, all-natural
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 1 medium banana
  • 1 cup oats, dry
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Serve With

  • 2 medium carrot

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk together egg, peanut butter, vanilla and honey.
  • In a separate bowl, mash banana or toss it into a food processor. Add banana to peanut butter mixture and blend well.
  • Stir in oats, chia seeds, baking powder and salt.
  • Scoop by tablespoon-fulls onto a baking sheet; bake for 10-12 minutes.
  • Serve with a side of carrot sticks.

Oh my goodness, my family and I absolutely adore these! It’s a shame my eldest can’t take them to school as a snack, it means they are at home with me and the toddler, calling to be eaten om nom nom

Can you make these with other nut butters and or Nutella instead? I have two who don’t like peanuts in any form so they wouldn’t even try one!

Also, is the batter meant to be quite loose before baking?

Hi Chelsea, you can try it with almond butter and chopped almonds if you like! I’m not sure how it’ll turn out: the peanut flavor and texture is pretty important in this recipe. I don’t recommend Nutella because the cookies would be super super sweet with that substitution. To answer your second question, yes, the batter is a little looser than cookie dough before baking, but the cookies firm up nicely in the oven. 🙂
