No Bake Cashew Cookies

  • 1/2 cup cashews
  • 10 medium dates, Medjool


  • Pit the dates.
  • Combine the cashews and dates into a food processor until they are well blended and form a dough.
  • Once a dough has formed, divide into 12 tablespoon size balls, and shape as desired.
  • Press a variety of toppings onto your cookies, such as chia seeds, flax meal, coconut, wheat germ, cocoa, dried fruit, oats, crushed nuts, or seeds.
