Mexican Fried Rice with Fruit & Cheese

Ingredients

  • 1 cup brown rice, raw
  • 15 ounce black beans, canned
  • 2 teaspoon canola oil
  • 4 large egg
  • 1 cup corn, frozen
  • 1 cup salsa
  • 1/2 teaspoon cumin, ground
  • 1/2 cup feta cheese crumbles

Serve With

  • 2 cup carrots, baby
  • 2 cup blackberries

Instructions

  • Cook rice as directed on package.
  • After rice is cooked, drain and rinse beans; set aside. Heat 1 teaspoon of oil in a wok over medium-high. Whisk eggs and add to wok. Stir to scramble then remove from wok. Add remaining 1 teaspoon oil to wok along with rice, beans, corn, salsa and cumin. Cook and stir for 2-3 minutes or until heated through. Return eggs to wok and stir to combine. Sprinkle with feta and allow to melt.
  • Serve fried rice with carrots and blackberries on the side.
