  • 1 pound rotisserie chicken
  • 1 stalk green onion
  • 1/4 cup yogurt, plain, low-fat
  • 1/4 cup mayonnaise, light
  • 1 teaspoon rosemary, fresh
  • 1 teaspoon mustard, dijon
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 1/8 cup almonds, sliced
  • 8 slice bread, whole wheat
  • 1 medium tomato, red
  • 4 leaf lettuce, romaine
  • 1 cup alfalfa sprouts

Serve With

  • 1 medium cucumber
  • 4 medium tangerine (mandarin orange)


  • Chop or shred chicken (about 3 cups worth). Chop green onion; slice tomato and cucumber.
  • Mix together yogurt, mayo, rosemary, mustard, salt, and pepper.
  • Add almonds, onions, and chicken to the mayo mixture and stir to combine.
  • Spread mixture equally onto 4 pieces of bread, then top each with a tomato slice, a lettuce leaf, and some sprouts.
  • Serve sandwiches with cucumber slices and tangerines on the side.
