Kidney Bean Wrap

  • 1 cup brown rice, raw
  • 15 ounce kidney beans, canned
  • 1 medium tomato, red
  • 1/4 cup cilantro
  • 2 cup spinach
  • 1/8 teaspoon salt
  • 4 medium tortilla, whole wheat

Serve With

  • 2 medium pear


  • Cook rice according to package directions.
  • Rinse and drain beans. Chop tomatoes and lightly chop cilantro and spinach.
  • Mix beans together with tomatoes, cilantro, spinach, and salt. Add warm rice; stir to combine.
  • Fill tortillas, then roll up tightly; serve with sliced pears on the side.
