- 1 cup brown rice, raw
- 15 ounce kidney beans, canned
- 1 medium tomato, red
- 1/4 cup cilantro
- 2 cup spinach
- 1/8 teaspoon salt
- 4 medium tortilla, whole wheat
- 2 medium pear
- Cook rice according to package directions.
- Rinse and drain beans. Chop tomatoes and lightly chop cilantro and spinach.
- Mix beans together with tomatoes, cilantro, spinach, and salt. Add warm rice; stir to combine.
- Fill tortillas, then roll up tightly; serve with sliced pears on the side.
