Ingredients

  • 4 large pita, whole wheat
  • 3 cup, chopped kale
  • 3 tablespoon olive oil
  • 1 tablespoon mustard, dijon
  • 1 medium lemon
  • 2 medium apple
  • 1/4 cup pine nuts, dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, ground

Serve With

  • 2 cup grapes

Instructions

  • Slice pitas in half.
  • In a large mixing bowl, combine kale, oil, mustard, and 2 tablespoons of juice from lemon. Toss together and allow to rest for 10-15 minutes.
  • Thinly slice apples and place inside pitas.
  • Add the pine nuts, salt, and pepper to the kale, and toss one last time; stuff inside pitas and serve.
  • Serve grapes on the side.
