Ingredients

  • 1 medium (approx 2-3/4″ long, 2-1/2″ dia) bell pepper, green
  • 1 cucumber (8-1/4″) cucumber
  • 1 stalk green onion
  • 8 tablespoon hummus
  • 4 pita, large (6-1/2″ dia) pita, whole wheat
  • 2 cup spinach
  • 1/4 cup sun-dried tomatoes
  • 4 oz colby cheese
  • 4 medium (2-1/2″ dia) tangerine (mandarin orange)

Instructions

  • Dice pepper, cucumber, and green onion.
  • Spread hummus inside pita, fill with diced veggies, spinach, and sun dried tomatoes.
  • Slice cheese, and serve with tangerines and cheese.
