- 8 tablespoon hummus
- 4 pita, large (6-1/2″ dia) pita, whole wheat
- 2 cup spinach
- 1/4 cup sun-dried tomatoes
- 4 oz colby cheese
- 4 medium (2-1/2″ dia) tangerine (mandarin orange)
- Dice pepper, cucumber, and green onion.
- Spread hummus inside pita, fill with diced veggies, spinach, and sun dried tomatoes.
- Slice cheese, and serve with tangerines and cheese.
