If you are looking for a dessert that is kid friendly, but also delicious, this is for you!  There is also no better timing for this rainbow dessert bar than springtime!  Some of the most colorful fruits are in season in the spring!   To ‘healthify’ this dessert, we used plain yogurt instead of ice cream for our sundae’s, as well as a variety of colorful fruits!

Colorful fruits and vegetables provide vital nutrients to growing kids. Each color represents a different antioxidant, and the darker the color, the more antioxidants it contains!

This is what we did for our sundae yogurt dessert bar:

Started with 4 cups plain yogurt, and mixed in 1 TBL honey

Froze entire bowl of yogurt/honey in the freezer for 6 hours

Chopped and sorted a variety of fruits for the rainbow:

  • Red: Strawberries
  • Orange: Mandarin orange segments (canned)
  • Yellow: Pineapple
  • Green: Kiwi
  • Purple/blue: Blueberries (frozen)

Got small mini cups from the grocery store

Separated the fruit into a variety of cups for frozen yogurt toppings!

DELICIOUS!!!
