  • In a medium mixing bowl, mix vinegar, oil, zesty Italian seasoning packet, chili powder, cumin, and dry ranch seasoning.
  • Spray the inside of your slow cooker with cooking spray and then add the chicken. Pour the dressing mixture over the top.
  • Cover and cook on high for 4 hours. When it is done, shred the chicken with a fork. Serve Cafe Rio style with a freshly cooked tortilla, chopped lettuce, beans, cilantro lime rice, pico de gallo, tortilla strips and cilantro lime dressing. Enjoy!
