- 1 medium tomato, red
- 1 none cooking spray
- 4 large egg
- 4 regular English muffin, wheat
- 4 ounce feta cheese crumbles
- 1 cup spinach
- 2 cup grapes
- 2 cup milk
- Slice tomato, set aside. Heat a skillet to medium high. Spray with cooking spray.
- Crack 1 egg at a time and break the yolk. Cook both sides of the egg and place onto toasted muffin. Do this for all four eggs. Top each muffin with egg, feta cheese, tomato slice and spinach. Top with the other half of the muffin. Serve with chilled grapes and a small glass of milk.
