Easy Crockpot Chicken & Rice

  • 3 cup salsa
  • 1 fruit (2″ dia) lime
  • 1 cup cilantro
  • 1 tbsp (1 serving) taco seasoning
  • 4 breast chicken breast
  • 1 cup brown rice, raw
  • 2 cup pineapple
  • 1 medium avocado


  • Add salsa, the juice of the lime, cilantro, seasoning and chicken breast to a crockpot; mix together, cover crockpot and cook on low for 4 hours.  (Be sure your chicken has been fully defrosted). 
  • Just before serving, cook rice as directed on package; shred chicken and top rice with chicken.  Serve with a side of diced pineapples and sliced avocado.
