  • 1 medium avocado
  • 1/4 cup basil, fresh
  • 1 clove garlic
  • 2 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 1 medium cucumber
  • 1/8 teaspoon paprika


  • In a food processor, combine peeled and seeded avocado, basil, garlic, lime juice, salt, and pepper. Blend until smooth and creamy.
  • Thinly slice cucumbers (lengthwise), using a mandoline slicer or potato peeler.
  • Spread a thin layer of avocado puree onto each cucumber strip, covering end to end on one side.
  • Roll up tightly, sprinkle with paprika, and serve!
