Ingredients

  • 15 1/2 ounce chickpeas (garbanzo beans), canned
  • 1 medium onion
  • 2 clove garlic
  • 1 large egg
  • 1 medium lemon
  • 1 teaspoon salt
  • 3 teaspoon parsley, dried
  • 1/4 teaspoon black pepper, ground
  • 2 teaspoon cumin, ground
  • 1/4 teaspoon cayenne or red pepper
  • 1/2 cup bread crumbs, plain
  • 2 tablespoon olive oil

Sauce

  • 1 cup yogurt, plain, low-fat
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dill weed, dried
  • 1 medium lemon
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground

Serve With

  • 4 medium tortillas, corn
  • 2 cup spinach
  • 2 cup grapes

Instructions

  • Drain garbanzo beans. Pour them into a mixing bowl and smash them with a fork. Set aside.
  • Add the onion, garlic, egg, juice of the lemon, and all of the spices to a food processor or blender, and puree until smooth. Pour over smashed garbanzo beans.
  • Mix together with a fork, adding the breadcrumbs in little by little until the mixture is wet and sticky but can still nicely be formed into balls.
  • Pour olive oil into the bottom of a large crockpot.
  • Form golf-ball sized patties of falafel and slightly flatten. Dip each side into the olive oil and then nestle into your crockpot. It’s okay if they overlap or are on top of each other.
  • Cook on high for 2-5 hours.
  • In a medium bowl, mix together the yogurt, celery salt, dill, and juice of the lemon. Season with salt and pepper, and refrigerate until ready to serve.
  • When ready to eat, add some shredded spinach to each tortilla; add falafel and top with yogurt sauce. Serve with grapes on the side.

I love falafel and i love my crockpot… so I had to try these. Unfortunately I’m going to have to tweak this recipe considerably if I were to make it again… n terms of ingredients, I had to use loads more breadcrumbs. 1 tsp salt is far too much in my opinion. As for the method, I have a large oval crockpot but had to cook the falafel in two batches. Finally, the ones in the middle stayed too soft and the ones touching the edges got burnt. It’s a pity!!
