  • 1 cup flour, all-purpose
  • 1/2 cup flour, whole wheat
  • 1/4 cup cornmeal, yellow
  • 3 teaspoon baking powder
  • 1 1/2 cup milk
  • 2 large egg
  • 6 teaspoon brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup blueberries, frozen
  • 1 none cooking spray


  • Mix dry ingredients (flours, cornmeal, and baking powder) in a large bowl.
  • In a separate bowl, whisk milk, eggs, brown sugar, and vanilla until well blended. Fold into dry ingredients.
  • Lightly spray a non-stick griddle. Pour batter (1/4 cup) onto griddle, and cook both sides until done throughout.
