- 2 medium sweet potato
- 1 tablespoon olive oil
- 2 teaspoon cinnamon
- Preheat oven to 400° F.
- Cut sweet potatoes into 1/4 inch-thick slices. Spread in a single layer on a baking sheet and drizzle oil over top.
- Sprinkle with cinnamon (more or less to taste) and bake for 30 minutes until crispy.
