  • 1 1/2 cup pastry flour, whole wheat
  • 1/2 cup cocoa powder, unsweetened
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup wheat germ
  • 2 medium banana
  • 1 3/4 cup almond milk, unsweetened
  • 2 large egg
  • 2 tablespoon olive oil
  • 1 teaspoon vanilla extract
  • 3 tablespoon honey

Serve With

  • 1/4 cup maple syrup, pure
  • 2 medium banana


  • Preheat waffle iron.
  • Mix dry ingredients in a large bowl; set aside.
  • Mash 2 bananas in a separate bowl; add the remaining ingredients and mix well. Pour wet ingredients into the dry and stir until just blended. Batter will be lumpy; avoid over mixing.
  • Pour batter into waffle iron as directed by manufacturer, and cook accordingly.
  • Slice remaining bananas. Serve waffles with maple syrup and banana slices on top.
