Cheesy Quesadillas with Apples & Peas

  • 8 medium tortilla, whole wheat
  • 1 cup cheddar cheese, shredded
  • 1 cup salsa
  • 4 medium apple
  • 2 cup green peas, frozen


  • Place one tortilla into a heated sandwich press; top with 1/4 cup cheese, followed by a second tortilla. Heat until cheese has melted and tortillas are golden brown. Remove from press and cut into quarters. Repeat with other tortillas and remaining cheese.
  • Allow to completely cool before packing into a lunchbox. Be sure to add some salsa, an apple, and some peas as well (no worries, the peas will thaw within plenty of time in the lunchbox).
