Champions Chicken Chili

Ingredients

  • 1/2 pound chicken breast
  • 6 cup water
  • 28 ounce white beans, canned
  • 1 cup Hominy, canned, white
  • 1 medium onion
  • 2 tablespoon diced green chilies, canned
  • 2 clove garlic
  • 2 teaspoon cumin, ground
  • 1/2 teaspoon oregano, dried
  • 1 cube Chicken Bouillon

Serve With

  • 2 medium orange
  • 4 cup lettuce, romaine
  • 1 cup cherry tomatoes

Instructions

  • Cover chicken with water in a large pot and bring to a boil; reduce heat to low and simmer until chicken is no longer pink in the center, 25-30 minutes. Remove chicken and set aside to cool. Reserve cooking liquid. Shred chicken when cool enough to handle.
  • Drain and rinse beans and hominy. Dice the onion. Combine together in pot with the chicken, cooking liquid, green chilies, garlic, cumin, oregano, and chicken bouillon. Simmer for 20 minutes.
  • Serve with orange slices and a salad of greens, cherry tomatoes and your favorite dressing.
