Carrots with Sweet Potato Hummus

  • 1 medium sweet potato
  • 1 cup hummus
  • 8 medium carrot


  • Peel and dice sweet potato. Place potato in a saucepan with water. Bring water to a boil, reduce heat and simmer; allow potato to soften. Drain and cool to room temperature.
  • Pulse cooked potato (begin with 1/2 of potato, adding more if desired) with hummus in a food processor.
  • Peel and cut carrots into strips; serve with hummus.
