- 2 medium carrot
- 3 cup (8 fl oz) yogurt, vanilla, low-fat
- 2 oz (60 raisins) raisins, seedless
- 1/4 cup, chopped walnuts
- 1/4 tsp cinnamon
- 2 tbsp honey
Peel and grate carrots.
Spoon 3 tablespoons yogurt into a clear glass. Sprinkly with 2T carrots, 3T yogurt, 1T raisins, 3T yogurt, sprinkle with 1T walnuts and dash of cinnamon(if desired, the honey may be drizzled on top as well). Repeat for the remaining 3 servings. Serve immediately.
