- 4 large egg
- 1 medium bell pepper, red
- 1 1/2 tbsp mayonnaise, light
- 1/8 tsp sea salt
- 4 cake Snacks, rice cakes, brown rice, multigrain
- Boil eggs for 10 minutes in a pot of water. Rinse with cool water and allow to cool. Peel hard boiled eggs and slice red pepper. Mix with mayo and salt; spread onto rice cakes.
