- 4 large egg
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper, ground
- 1 medium avocado
- 4 slice bread, whole wheat
- 4 medium orange
- Spray skillet with cooking spray and heat over medium.
- Whisk together eggs, salt, and pepper. Pour into skillet and scramble for 2-3 minutes. Cook until no longer runny.
- Remove the skin and pit from the avocado and lightly mash.
- Toast bread; spread each with avocado and scrambled eggs.
- Serve with orange wedges on the side.
