Ingredients

  • 4 large egg
  • 1 medium avocado
  • 8 slice bread, whole wheat

Serve With

  • 2 cup grapes

Instructions

  • Spray a non-stick skillet with cooking spray.  Cook each egg to desired doneness.  While eggs cook, remove skin from avocado and slice thinly; set aside.
  • Toast bread. Layer bread with an egg and a few slices of avocado. Top off with second slice of bread.  Serve with grapes.
