- 3 medium carrot
- 2 cup orange juice
- 1/4 medium lemon
- 1/2 cup Greek yogurt, vanilla
- Peel carrots and cut into chunks. Place in a bowl with a small amount of water, cover loosely, and microwave on high until soft. (If time allows, you can avoid the microwave and cook on the stove top instead.)
- Place carrots, orange juice, 1/4 of the lemon (peeled), and yogurt into a high powered blender; mix thoroughly. Add ice if desired until preferred consistency is reached.
