Ingredients

  • 24 leaf spinach
  • 2 medium apricot
  • 1 cup cherry tomatoes

Sandwich

  • 8 slice bread, whole wheat
  • 4 tablespoon almond butter
  • 4 ounce cashews
  • 1 teaspoon ginger, ground
  • 2 medium peach

Instructions

  • For salad kebab, skewer in this order: 2 spinach leaves, slice of apricot, 1 tomato, 2 spinach leaves,  slice of apricot, 1 tomato, 2 spinach leaves. Repeat with the three other skewers. Set aside until ready to serve.
  • For the sandwiches: Toast 2 bread slices at a time, then top with 1 tablespoon almond butter, 1 ounce chopped cashews (unsalted), a sprinkle of ginger powder, and sliced peaches. Serve immediately with a salad kebab.
