Ingredients

  • 1 tablespoon – olive oil
  • 1 pound – turkey, ground
  • 1 medium – onion
  • 1 medium – bell pepper, red
  • 1 medium – bell pepper, yellow
  • 2 cup – TOMATO SAUCE
  • 2 can – diced tomatoes, canned
  • 2 cup – black beans, canned
  • 2 cup – kidney beans, canned
  • 1 cup – peppers, jalapeño
  • 1 cup – corn, frozen
  • 1 tablespoon – chili powder
Toppings:
  • 1/2 cup – Greek yogurt, plain
  • 1 medium – avocado

Directions

  1. Heat oil in a large skillet over medium. Cook ground turkey for 8-10 minutes or until browned and no longer pink.
  2. Dice onion and jalapeños (if using), chop peppers, and drain and rinse beans.
  3. Add all ingredients to the slow cooker; cook on low for 6 hours or high for 4 hours.
  4. Top each serving with yogurt and a slice of avocado, if desired.
